Easy "Maakouda" Family Recipe
Many cultures have a version of this dish that has been passed down through my family. My own grandmother, Laaba Djellali, used to make this for my mother in Algeria when she was growing up. I never met my grandmother so this is my way of feeling connected to her through her cooking.

Easy "Maakouda" Family Recipe

Potatoes, 5 Potatoes
Eggs, 2 Eggs
Italian Parsley, Handful to taste
Leftover Meat
Onion, 1/2 Onion
Optional: Shredded Cheese of Choice
Salt & Pepper, to taste
Olive Oil, for frying

Ingredients
- 5 potatoes
- 2 eggs
- Handful of Italian parsley (to taste)
- Leftover meat (can omit to make vegetarian)
- 1/2 onion
- Optional: shredded cheese of choice
- Salt & pepper, to taste
- Olive oil, for frying
Directions
- Boil and mash potatoes.
- Chop leftover meat, onion, and parsley.
- Mix all ingredients together. Optional: add cheese.
- Add salt and pepper to taste.
- Form patties with the mixture.
- Heat olive oil in a pan.
- Fry patties until brown.
- Serve with a fresh side salas.
Tip: Leftovers are delicious as a brunch item with avocado, an over easy egg, and sauerkraut.
